Rainbow Fruit Cake

As I've mentioned before, since making Bubbles a cake out of fruit for her second birthday, my husband (Numnut) and I've become fast fans of fruit cakes.

This year Bubbles requested a sky bithday party, to go along with the theme we created a Rainbow Fruitcake.


Our cake was inspired by Raising Jane's amazing Pistachio Melon Cake. We used the picture of Mary Jane's cake constantly as a guide when making our Rainbow Fruit Cake. Unike Mary Jane though we didn't want to use any sugar when making our cake.

What we used:
2x3cm thick slices watermelon (seedless)
1x3cm thick slice rockmelon
1x3cm thick slice honeydew melon
1.5kg Blueberry Greek Yoghurt

To decorate:
Strawberries
Mandarin
Banana
Kiwi Fruit
Black grapes or blue berries


How we made it:
Stack all of the melon slices on top of each other, and cut inside the rind of the smallest round, creating four pieces of melon that are uniform in size.

Place a slice of watermelon on a plate and 'ice' with a generous layer of yoghurt.

Place the honeydew melon slice on top and 'ice' with yoghurt, add the rockmelon and 'ice' with yoghurt again before placing the final piece of watermelon on top.

Place the fruit tower carefully into a freezer for half an hour or until 'set'.

Remove the tower from the freezer and 'ice' the entire creation with the remaining yoghurt.

Slice the decoration fruits and place ontop of the cake in the shape of a rainbow.

Place sliced grapes around the bottom of the cake to create a border.

Pipe vanilla yoghurt at rainbow ends for clouds.

Place cake in freezer until set


Note: We made this cake twice-once with Numnut's family and once for Bubbles' birthday party.

The first time we created the cake on the day and it only sat in the freezer about an hour, the second time we froze it overnight and let it defrost an hour before the party.

The cake tasted beautiful the first time, the fruit was just chilled and it was a lovely dessert for a warm summer's day.

The second time however the fruit was still frozen through and for the majority of the kids it was simply too cold, so if you have a choice don't freeze it overnight or if you do give it longer than an hour to defrost!

The second time we made the cake, I added blue food dye to natural Greek yoghurt to give more of a sky hue but I wouldn't do it again-lots of blue little faces and hands!
